About Cold Harbor

New England Coffee & Provisions

From Bean to Brew

We work with expert roasters who source specialty-grade coffees: unique, ethically farmed beans from across the globe. Every lot used for Cold Harbor has scored 80+ on the Q-scale, meeting true specialty standards.

Our roasting partners focus on extracting each bean’s natural character while maintaining consistency batch after batch. Profiles are shaped through careful adjustments in temperature, airflow, and time, so the end result reflects both the bean’s origin and our standards for balance and depth.

The Roasting Process

Roasting is part art, part precision. Using modern convection drum roasters, beans are roasted over natural gas burners with heat and airflow carefully controlled.

In 12 to 14 minutes, the beans are developed to between 390 to 440°F, then rested for 48 hours to let their flavors fully settle. What arrives in every Cold Harbor bag is coffee that’s smooth, balanced, and ready to brew the way it was intended.
